onion
½kg of beef
a batch of parsley
½kg of semolina
a cup of okra
a spoon of tomato paste
salt
pepper
citric acid
sugar
oil
water
Grate the onion into a bowl, add a bit of salt and pepper, add chopped parsley and the beef, put it all together. Heat in an oil pan. Pour semolina into the bowl and add tepid water, and let it soak for several minutes. When the oil is hot pour a cup of okra into the pot together with the tomato paste, and let it fry for some five minutes. Then add three cups of water, cover the pot and boil.
Form balls out of the semolina mixture, and then turn them into "tiny bowls", fill them with the meat mixture and close. When the soup has boiled, add a teaspoon of citric acid and some sugar and put the kibbehs into the soup (you can wet your hands to prevent them from sticking). Cook for about ten minutes.
