MALKA COHEN - VEGETABLE AND ZUCCHINI SOUP
Ingredients:
For a pot of 2-2½ liters:
medium-sized onion
4 carrots, two zucchini
1 spoon of oil
3 spoons of oats flour
3 celery branches
hot water
salt
pepper
cumin
saffron according to taste
1 spoon of chicken soup powder
Preparation:
Heat a pot with oil. Chop the onion and add to the pot. Grate the carrots and zucchini (roughly). Add to the pot and evaporate for about five minutes. Add the hot water up to two-thirds of the pot, add spices.
Let it boil for about ten minutes. Add the oats and stir. Chop the celery, add to the pot and stir. Cook ten more minutes over small fire.
